I hardly ever have enough bananas to make regular banana bread so when I came across this recipe a few years ago, I tried it out. The original recipe needed some tweaking and the final result is an easy, moist bread that everybody loves.
2 cups all-purpose flour 3/4 cup brown sugar
1 teaspoon baking soda 2 eggs, beaten
1/4 teaspoon salt 1/2 cup butter, room temperature
1/2 teaspoon cinnamon 1/2 teaspoon vanilla
1/2 teaspoon nutmeg 2 - 2 1/3 cups mashed overripe bananas and blueberries
(can be any ratio, but I prefer two bananas, the rest berries)
Preheat oven to 350 degrees. Lightly grease 9x5 bread loaf pan.
In a large bowl, combine flour, baking soda, salt, cinnamon and nutmeg. In a separate bowl, cream together butter and brown sugar, add eggs. Stir in bananas and berries until well blended. Combine flour mixture and banana mixture until just blended. Pour into the loaf pan.
Bake for 60-65 minutes or until a toothpick comes out clean. Do not overbake. Delicious!
